[Bug]: Default USDC token for Sei network is incorrect

Describe the bug

The default USDC contract is using USDCN contract address, which causes the token to appear twice on Swap screen

Expected: Default swap token for Sei should be USDC

Actual: Default swap token for Sei is USDCN
