fix stats counter, move to separate file

• Restores counter animation
• Moves stats to separate component
• Reduces animation interval so NumberFlow can update continuously

After deploying this, go to the dashboard, navigate to your production instance, and run the statsClearAndSync function. You can also run it from your project locally:

npx convex run stats:clearAndSync --prod
