Add support and documentation for Elastic self-hosted deployment

Currently, this demo is primarily configured for Elastic Cloud or Serveless. To improve flexibility and support for users running in local dev environments, we should add support for self-hosted Elastic deployments. One possible option could be integrating with https://github.com/elastic/start-local
