Move deploy.sh arguments to user questions

Instead of the ./demo.sh cloud-hosted k8s or ./demo.sh cloud-hosted docker, the script should ask for user's input:

- In which environment the demo should be deplyed? [docker/k8s]
- Which Elasticsearch deployment type do you want to send the data into? [serverless/cloud-hosted]
