Encrypted files are manually created as such with the checkbox at New File dialog. Encrypted files are with .jenc extension.
As such, you can freely chose what to encrypt or not/ what stays plaintext.

Sorry if already previous discussed, I wasn't able to find it if it was.
Is there a way I can remove my encryption password entirely so my files don't get auto encrypted? (Without completely uninstalling or nuclear data clear)
Cheers
