I have Windows 11 Home.

When I

1. select option 7:
   [7] Change Windows Edition
2. select edition 2:
   [2] Professional

I receive notes:

Notes -
 - Save your work before continuing, the system will auto-restart.
 - You will need to activate with HWID option once the edition is changed.

What do you mean, "you will need to activate with HWID"?
Do you already have a solution for this? Is it the one (option 1) selected in step 1?
Or will I need to do something manually?

I'm asking because I'm afraid to implement such changes without knowing the consequences in advance.

Each edition requires separate activation; your activation for the Home edition won't work on Pro.
Script is just telling you that you will need to activate it using the HWID option once the edition is changed.
