Switch from cookiecutter to Copier.

Use case

This will allow to prepopulate answeres like "hyphenated" and "underscored" based on "plugin_name". Thus safe a little bit on typing.

But the main advantage: When this template involves, users can use Copier to pull in those changes to their instantiated projects. Ref: https://copier.readthedocs.io/en/stable/updating/. Apparently the same can be done with cruft. I only have experience with Copier and can recommend it.
