I think you can already point prometheus at postal https://docs.postalserver.io/features/health-metrics |

Implement prometheus metrics for outgoing messages (smtp_sender) with lables for status (sent, hardfail, softfail, ....) & the domain.
With this addition it would be possible to setup alertings via prometheus about delivery errors.
