[Epic] AWS v7: Update documents

Gather any getting-started guides, README's, configuration guides or other standalone materials that need to be updated to align with the new version of the AWS provider and mark them in this issue.

Once the release is out, these documents must be updated accordingly. When that is done, this issue can be closed.

We can use the migration guide to identify things that need updating in the docs: 7.0 Migration Guide | Pulumi Registry

The changes that are most likely to show up are those to bucket/bucketv2
