Make AppKitBackend Picker Item have a higher contrast color in darkmode

On macOS 26 in darkmode the items currently look like they were disabled, even though they are not and are very hard to read.

I'm going to look into it tomorrow. Maybe other backends are affected too, I'm not sure atm.
