Update theme var docs (#2320)

Fixes #2319

I feel like we'd omitted the `--default-*` vars on purpose but I'm not
certain (given that *all* of them are currently missing).

But this did reveal to me that the color vars needed tweaking (decimal
-> percentage) and that the text shadow ones were missing.
