Changes

Update MCP SDK requirement from >=0.1.0 to >=1.2.1
Add explicit version constraint for better dependency management

Purpose

This update ensures we're using the latest version of the MCP SDK, which includes:

Latest features and improvements
Security updates
New dependency on pydantic-settings>=2.6.1

Testing

Verified installation of new version
Ran existing test suite successfully
